Why Did The Turkey Cross The Road? 'Cause There Was A Vegan On The Other Side!

Finally, a chance to sit for a few minutes and think about all the food I have seen pass before my eyes today...As we are with family this holiday, we had a 'mixed' meal on the table...but I believe ours was the best by far! Since we are on the road we knew it would be a little difficult to find things that would make an easy meal here in KY, so prior to leaving Austin, I picked up a Tofurky Vegetarian Feast, 3 lb. 8 oz.. I am quite thankful I did...

As we all gathered around the table today, my husband and I sat down to an excellent Tofurky roast with stuffing that was cooked to perfection...thanks to my husband. He let me sleep in while he got it in the oven early this morning. He had also placed some potatoes an brussel sprouts in the dutch oven with the roast and they were cooked to a tender perfection. I was in charge of cooking the vegetable dumplings with cranberries and apples. Well, the end result was not very pretty, but I got the job done! But, I did manage to heat the mushroom gravy without incident.

The meal was very very good, but made even better by the fact we were with my husband's family. This is the first major holiday since his father passed away in May. It has been quite surreal being back in Glasgow as I had been here helping care for him during the entire duration of his illness. Today we were with my mother-in-law, sister-in-law and her husband, and their 2 yo daughter, 'B'. Walter is missed but we focused on the positive things thus dinner today was a very joyous one.
