Oodles Of Noodles...

Noodles! Oodles of noodles! Have I mentioned lately how I like my noodles? Vietnamese style, that's how. And with a bit of hot pepper and lemon grass and tofu and green onion and sprouts and peanuts and oh, how I could go on...

When Tom and I moved to Austin back in 1998, the first place we went to eat was a little Vietnamese restaurant called Kim Phung on North Lamar Blvd. The first dish I tried was the one described above, currently known as #43 (makes me think of a House episode...). Over the years and multiple other dishes tasted, this one has remained my favorite.

Asian food has always been a favorite of mine in general. Fortunately for me, Vietnamese is healthier than most other types, relying on fresh herbs for major flavor other than things like lots of oil for frying or heavy sauces, and a back drop such as greens in which to highlight these flavors. Yes, meat is often used, but in the dishes I eat obviously it is not. Despite not using lots of oil, heavy cooking methods, or fat-laden sauces, these dishes never fail to fill me up.


All this talk about #43...kinda making myself hungry. Think I might be heading to Kim Phung tomorrow...
