The Neverending Question...

What to have…What to have…*that* is the question. One of the hardest things to do is figure out what to cook when I am starving. When I wait this long, even the kitchen sink looks tasty. Fortunately Tom didn’t wait around for me to figure out what I was going to make…commence *Project Fajitas*!

I was sitting in the living room working on the computer, trying to think of something to make when all of a sudden the most wonderful smells began wafting through the air. Sautéed onions have to be one of the best things ever. Ever. The smell was so magical I couldn’t help but go into the kitchen to see what sort of wonderful was going on in there. 

Tom had sliced up a couple of onions and thrown them into a large sauté pan. It took several minutes, but they finally began to caramelize beautifully. While they were going he sliced up an orange bell pepper. We were out of green, red, and yellow ones…our preference would have been green but sometimes you gotta go with you have on hand. After the pepper was sliced, he threw it into the pan as well. At this point I was salivating and wanted to do anything I could to help get dinner on the table, so I sliced up a fresh jalapeño and tossed that into the mix as well. Things were really starting to smell heavenly at this pont.


While things were cooking up nicely, we opened up a can of refried beans and put them on to heat. We had some fresh whole wheat tortillas and I started heating those up on the stove top as well. Since things were coming together so quickly, we didn’t take time to make any rice. We were also out of avocados so no guacamole. L Boo on that! Next time I’ll be sure to have the ingredients on hand for the guac as well as some brown rice made up in the fridge. 


As the onion, pepper, and jalapeño were nearing the end of their cooking time, Tom threw in some liquid smoke. This was the first time either of us had added it to our sautéed veggies and we were so happy he thought of doing so. Just that small addition was enough to completely turn the fajitas from good to amazing. The taste was quite similar to the veggie fajitas we get at our favorite Mexican restaurant here in town, Enchiladas Y Mas. Next time we won’t be afraid of the liquid smoke and definitely add more!

Once everything was done heating/cooking, we assembled our fajitas and began our feast. Unbelievably tasty! So now that I have made myself completely hungry, I am going to go and dig something out of the fridge to snack on…I’m starving! Too bad we don’t have any fajita fixings left! Next time we’ll have to make more!

Where Has the Time Gone?

Hello, everyone! It's been so long! How are you? What's new? I can't believe how long it's been since the last time I posted anything. I know everyone has life get in the way of things...work, health, other obligations, etc. - you name it. I'm not going to make excuses, but I am going to try to do a better job of posting as I try to get my health back on track (more on that in another post).

Previously when I have posted, it was in the context of Vegan MoFo (the month of vegan food for anyone not familiar). As I continue to post from here on out my goal is to incorporate information related to different health issues, nutrition topics, and of course I will also get back to posting about *yummy* vegan food.
So to get things started, I’ve decided to begin with the yummy part and in a few days I’ll hit on some of the other stuff. So, what did you have for lunch?

For us it was a wonderful Tofurky Turkey Rueben. Note that when I use the word 'wonderful', I do not use it lightly, so these sandwiches definitely had the *wow* factor! I have been craving one of these sandwiches for a couple of years now and *finally* had one the way I wanted it: a couple of piece of toasted homemade rye bread piled high with sauerkraut and Tofurky turkey slices, topped with homemade Russian Dressing. Allow me to say: OH MY GOD. I was in Rueben heaven!! I highly recommend this sandwich to anyone out there looking for something good to eat, if you have been in a rut...or if you haven't been in a rut - you still need to make this sandwich. And devour it.

For the Russian Dressing, I mixed 3 TBS of Veganaise with 1 tsp of ketchup (non high fructose corn syrup, of course) and added about 1 – 1.5 tsp relish.

Sorry there isn’t a pic to post…we ate the sandwiches way too quickly to get one – they were that good!
